Vinification
The grapes for 980 are thoughtfully hand selected from the top of the ‘Colline’ cru, located in the middle of Villa Saletta. They are softly pressed and fermented in small new Allier French oak barrels with whole cluster fermentations to preserve freshness and aromatic complexity, while also extracting colour and roundness. Malolactic fermentation takes place in new French oak barrels to enhance the wine’s finesse and elegance. The wine is then aged for 24 months in 100% new tonneaux, 6 months in concrete vats and 2 years in bottle before release.
Tasting notes
Cocoa and coffee on the nose, followed by intense blackcurrant, violet, and black pepper. The aromatic profile is deep and layered.
The palate is full-bodied and powerful, with refined tannins, excellent freshness, and a long, complex and precise finish.
