Vinification & tasting notes
Previously the estate’s flagship wine, the Saletta is a blend of Cabernet Sauvignon and Cabernet Franc with a touch of Merlot to finish, selected from the best vineyard crops of the vintage. Aged for a year in French oak barrels (minimum 50% new oak) then aged for a further 2 years in bottle before release, the goal was to create a wine with intensity and complexity coupled with the ability to evolve over a 6-10 year cellaring cycle or longer. This barrel-ageing lends the wine structure and character, so the wine is best enjoyed after decanting.
