The most complex, essential and emotional activity started: the grape harvest. This year, because of the hot weather and drought, we must admit that we haven’t been always  relaxed, but at the end we are more than satisfied of how things went.

We began to harvest the Merlot, which opened the dances of this 2021, on September 6th. We will then proceed with our beloved Cabernet Franc, followed by our Sangiovese and finally the Cabernet Sauvignon, which will close the harvest season towards October 10th.

In the cellar we have instead bottled the whole 2018 vintage of Chianti Superiore, Chiave di Saletta, Saletta Giulia, Saletta Riccardi and 980 AD. They all will age at least two years in the bottle, reconfirming the importance for us to wait, cradling our wines with patience and foresight in our cellar before putting them on the market.

We are very busy and involved also in “the other side of agriculture”: we are preparing the land for winter sowing and we are increasing the production of aromatic herbs that are part of a new project that we particularly care about. Indeed, we would like to create soon our own cosmetic line, obtained from our strictly organic crops and we can’t wait to let you try our products.

We are also tilling the poplar groves, so as to allow the rains to recreate the water reserves they need so much to be able to grow strong and healthy.

Soon it will also be time to harvest the olives and that is why we monitor our olive trees every day, making sure that they grow at their best and do not incur diseases due to parasites.

Gourmet dinner with our labels

Gourmet dinner with our labels

Gourmet Dinners in collaboration with Gambero Rosso go on in some of the most important and awarded Italian restaurants. This month we will be at IYO in Milan. The first Japanese restaurant in Italy winning the Michelin star. We have already defined the menu test and we are proud to admit that our wines match wonderfully with Oriental cuisine, especially the red ones.

At the soiree will take part our CEO and Technical, Director David Landini and the Gambero Rosso wine guide Manager, Giuseppe Carrus.

The dinner, open to the public and the national press, will take place on September 20th at 8.30pm. For more information visit: https://www.gamberorosso.it/eventi/villa-saletta-tour-iyo-experience/
